Savor Fort Wayne (with some smart choices)

It’s time to Savor Fort Wayne! Starting tomorrow, local diners can enjoy 12 days of delicious options at some of their favorite local eateries for a special price. This year, we’re sponsoring the event by recommending Parkview Lighter Choices on select menus. To tempt your palate, we asked three Parkview dietitians to share what they love about these smart selections.

El Azteca Mexican Restaurant

Rachel Beining, RDN, CD

“The black bean soup is a lovely vegetarian option that offers a high quality, lean source of protein and delicious flavors. This dish is both filling and satisfying due to its high fiber and protein content.

The Mesquite Chicken and Black Bean Quesadilla offers two lean sources of protein and a good amount of fiber to keep you full. Accompanying the protein of this dish, are some delicious and flavorful vegetables that will add a little kick to the meal. Green chilies, onions, tomatoes and jalapenos are wonderful additions that really balance the flavor and nutritional aspects of this selection.”
 

Don Hall’s Factory

Elle Stronczek, RDN, CD

“The Chicken Waldorf Flatbread, which can be found as an appetizer, is a flatbread topped with grilled chicken, apples, celery and spinach, topped with blue cheese crumbles and a balsamic reduction. A traditional Waldorf salad is tossed in a mayonnaise-based dressing, which is high in fat and calories. This version skips the heavy dressing but provides a lot of flavor with just a small amount of each ingredient, making it lighter on total calories.

This dish provides lean protein in the form of grilled chicken, keeping you full and satisfied without a lot of fat. Speaking of fat, this dish includes walnuts, which are a great source of omega 3 fatty acids and are high in antioxidants. Rounding off this dish are apples, celery, grapes and spinach which provide vitamins, minerals and fiber.

The next menu item I’d love to try is the Pistachio Crusted Salmon, which can be found as an entrée. This dish includes a pistachio-crusted filet of salmon served over wild rice with a whole grain mustard sauce. The salmon in this dish is high in omega 3 fatty acids, which have been shown to reduce inflammation, lower blood pressure and decrease risk for heart disease. The wild rice provides more fiber than traditional white rice, keeping us fuller longer while also providing vitamins, minerals and antioxidants. The salmon in this dish is crusted with pistachios and served with a whole grain mustard sauce. Pistachios are lower in calories than most nuts, but still provide the benefits of omega 3 fatty acids, vitamins and minerals. Serving this dish with a whole grain mustard sauce provides flavor with less calories and fat than a cream sauce.”

 

Club Soda

“Club Soda is a local personal favorite for my husband and I. Whether it is a special occasion or date night, Club Soda never seems to disappoint.  I was especially excited to see their selections for Savor Fort Wayne! For the starter, the Caesar salad not only sounds delicious, but has a great ingredient to add some extra nutrients, and that is kale! Not only does this leafy green add flavor, but also a good dose of vitamins, minerals and fiber. Be sure to ask for dressing on the side to decrease the amount of calories and fat you may be adding.

For the Parkview Lighter Option, the North Atlantic Salmon not only packs nutrients but flavor with the honey-Sriracha glaze! Salmon is a great source of lean protein, but also omega 3-fatty acids and vitamin D. For the side, I recommend pairing the salmon with a baked potato. Take care in what you add to this side, as many additions such as bacon and cheese can quickly add calories and fat.

As for dessert, it is ok to treat yourself in moderation. A key tip I like to share with others is to split your dessert, or take it home to be enjoyed later on.”

 

Black Canyon

"Planning a date night during Savor week? Head to Black Canyon for upscale American classics and a sleek, but relaxed atmosphere. Try the delicate, delicious cedar plank salmon. The protein rich fish contains a healthy dose of omega 3 essential fatty acids, which have been shown to contribute to healthy brain and heart function. Paired with the seared fish is a side steamed broccoli and roasted cherry tomatoes. This combination contains more immunity boosting vitamin C than an orange. All of these components – the fiber-rich broccoli, sweet cherry tomatoes, savory mustard vinaigrette and protein-packed flaky fish – make this a winning plate that will leave both your tastes buds and your stomach satisfied."
