Vegetarian Chili
2 tsp olive oil
2 cups chopped onion
1 Tbsp minced garlic
2 cups chopped red pepper
1 can black beans, rinsed
1 can black eyed peas or white northern beans, rinsed
1 can kidney beans, rinsed
1 cup quick cooking barley
2 Tbsp chili powder
1 tsp cumin
1/8—1/4 tsp cayenne pepper
2 cans chicken broth
2 cans stewed tomatoes
1. Put olive oil in medium skillet and sauté onion and garlic for about
3 minutes.
2. Place all ingredients in slow cooker sprayed with nonstick cooking
spray.
3. Cook chili on low for 4 hours or until you are ready to eat!
